ZUCCHINI PANCAKES WITH HOMMUS

Serves 6 as canapés, 2 as breakfast

Cooking time: 20 min


INGREDIENTS

1/2 tub 200g Yumi’s Classic Hommus
2 zucchinis, grated
1/2 bunch of mint leaves
1 cup plain flour
1 cup milk / rice, almond, soy or dairy
2 eggs
1 stem of spring onion, sliced
Sprinkle of pepitas

Herbs to garnish

METHOD

  1. combine grated zucchini, mint, flour, milk and egg in a mixing bowl

  2. On med - high heat, spoon mixture onto frypan to desired pancake size

  3. Cook for aprox 5 mins or until set

  4. Flip and repeat

  5. Dollop a generous serve of hommus onto each pancake and garnish with spring onion & pepitas

Delicious for Breakfast with poached eggs & pan fried mushrooms!
