GARLIC PESTO LAMB CHOPS

Prep time: 10 mins plus 4-6 hours refridgeration
Cooking time: 10 mins


INGREDIENTS

18 lamb cutlets
1 cup pesto
6 sprigs thyme, leaves removed
1 x Yumi’s Classic Garlic dip
4 cloves garlic, crushed
4 anchovy fillets, finely chopped
Zest 1 fresh lemon, finely chopped
1/4 preserved lemon, finely chopped
Juice 1/2 lemon
Seas salt and freshly cracked black pepper

METHOD

  1. To make marinade combine all ingredients except lamb chops.  Mix well.

  2. Add chops and toss to coat.  Refrigerate 4-6 hours.

  3. Grill chops on the BBQ over medium-high heat for 2 mins each side and serve.
