MEXICAN STUFFED BAKED CAPSICUMS

Cooking time: 30 mins


INGREDIENTS

Yumi’s Mexican Bean Dip or Create
Yumi’s Guacamole & Jalapeno Dip or Create
3 capsicums, 1/2d and cleaned, oiled
3 cups of cooked rice (we used a mix of white & black)
6 cherry tomatoes, halved
1/2 stem of spring onion, sliced
2 crushed corn chips
Herb leaves to taste

METHOD

  1. Bake capsicum 1/2s for 15 mins on 180˚

  2. Mix cooked rice with full tub of Yumi’s Mexican Bean Dip or Create

  3. Remove Capsicums from oven, drain off excess fluid and spoon in rice mixture

  4. Return to oven for further 15 mins or until capsicum starts to char

  5. Remove capsicums from oven and dollop on Yumi’s Guacamole & Jalapeno Dip or Create

  6. Sprinkle remaining ingredients on top


TASTY TIP!
Use leftover cherry tomatoes, chilli, onion & shallots to toss through a Mexican salad. Add in Guacamole with Jalapeno or Mexican Bean Dip Or Create for a flavour burst!
