MEXICAN STUFFED BAKED POTATOES

INGREDIENTS
Yumi’s Mexican Bean Dip or Create
Yumi’s Guacamole & Jalapeno Dip or Create
4 potatoes, baked
1/2 cob of corn, baked
4 cherry tomatoes, halved
1/4 chilli of choice, sliced
1/8 red onion, diced
1 stem of spring onion, sliced
Coriander leaves to taste
METHOD
Slice baked potatoes into quarters
Dollop a generous amount of Guacamole with Jalapeno and Mexican Bean Dip or Create onto each baked potato
Sprinkle remaining ingredients on top
TASTY TIP!
Use leftover cherry tomatoes, corn, chilli, onion & shallots to toss through a Mexican salad. Add in Guacamole with Jalapeno or Mexican Bean Dip Or Create for a flavour burst!
