MEXICAN STUFFED BAKED POTATOES

INGREDIENTS

Yumi’s Mexican Bean Dip or Create
Yumi’s Guacamole & Jalapeno Dip or Create
4 potatoes, baked
1/2 cob of corn, baked
4 cherry tomatoes, halved
1/4 chilli of choice, sliced
1/8 red onion, diced
1 stem of spring onion, sliced
Coriander leaves to taste

METHOD

  1. Slice baked potatoes into quarters

  2. Dollop a generous amount of Guacamole with Jalapeno and Mexican Bean Dip or Create onto each baked potato

  3. Sprinkle remaining ingredients on top


TASTY TIP!
Use leftover cherry tomatoes, corn, chilli, onion & shallots to toss through a Mexican salad. Add in Guacamole with Jalapeno or Mexican Bean Dip Or Create for a flavour burst!
