BAHN MI WITH THAI SPICED FRITTERS

Prep time: 10 mins plus 15 mins for pickling
Cooking time: 2 mins


INGREDIENTS

Yumi’s Thai spiced fritters
Yumi’s Smoked Chipotle Hommus
4 long bread rolls
Coriander
1 cup carrots cut into batons
1/2 cup thinly sliced cucumber
2 tablespoons thinly sliced chilli

PICKLED VEG

2 cups water
3 tablespoons unseasoned rice vinegar
1 tablespoon granulated sugar, divided
1 cup matchstick carrots
4 thinly sliced small radishes

METHOD

  1. Pickled Veg
    Bring water, rice vinegar, and sugar to a boil in a small saucepan over medium-high. Combine carrots and radish in a medium bowl; pour vinegar mixture over vegetables, and let stand 15 minutes.

  2. Thai Spiced Fritters
    Cook fritters, in batches if necessary, until browned and crispy on both sides, about 5 minutes. Remove from press, and immediately sprinkle with salt. Cut in half

  3. Combine
    Drain and discard liquid from carrots and radish; set aside. Spread both sides of halved baguettes with Smoked Chipotle Hommus. Layer 3 fritter half slices per sandwich; top with pickled veg, carrots, cucumber, coriander, and chilli. Serve immediately.
