THAI SPICED PUMPKIN SOUP

Cooking time: 1 hr to roast pumpkin


INGREDIENTS

1 pumpkin, roasted, cooled, peeled & seeded
Milk of preference (1 - 2 cups)
Yumi’s Coriander, Chilli, Cashews and Lime dip (1/2 - full tub)

METHOD

  1. Blend pumpkin with one cup of milk, add more milk until desired consistency.

  2. Blend in 1/2 tub of Yumi’s Coriander, Chilli, Cashews and Lime dip, add more for extra flavour!
    Warm up and serve

Tasty Tip!
Make a big batch and freeze portions for a rainy day.
