Yumi's Warm Roast Cauliflower Salad with Zesty Lemmon Hommus

WARM ROAST CAULIFLOWER SALAD

Prep time: 20 mins
Cooking time: 45 min for roasting


INGREDIENTS

Yumi’s Zesty Lemon Hommus (1/2 - full tub)
1 cauliflower
1tsp tumeric
drizzle olive oil
pinch salt & pepper
2 cups green beans
drizzle of sesame oil
2 tsp toasted sesame seeds
1 tbs toasted cashews
1 cup quinoa cooked
Herbs to garnish

METHOD

  1. Rub cauliflower with olive oil & sprinkle with tumeric, salt & pepper or your choice of seasoning. Roast whole in oven at 180º for 45 mins. Chop florets.

  2. Simmer 1 cup of quinoa to 3 cups of water for 15 mins or desired softness.

  3. Steam green beans for 5 - 10 mins (shorter time for more crunch, longer for softness). Drizzle with sesame oil.

  4. Spread a thick layer of Yumi’s Zesty Lemon Hommus in bottom of bowl. Layer up with the cooked quinoa, sesame beans & roasted cauliflower. Drizzle a little more hommus on top & sprinkle over seeds, nuts & herbs.
