CHIPOTLE TEMPEH STREET TACOS

INGREDIENTS

Yumi’s Mexican Bean Dip or Create - Available at Coles
Yumi’s Guacamole & Jalepeno Dip or Create
Soft street tacos
Purple cabbage or iceberg lettuce, shredded
Salsa
Chipotle Tempeh or protein of choice

METHOD

  1. On low heat on lightly oiled pan, warm up soft tacos aprox 1 minute each side or until they just start to toast. They should have light toast marks and stay soft!

  2. Assemble the ingredients, fold up and devour!


CHARRED CORN & ROAST CAPSICUM SALSA

INGREDIENTS

1 cob of corn, roasted, chopped
1 capsicum, roasted, chopped
1/2 bunch coriander, chopped
1 punnet cherry tomatoes, chopped
Juice & zest of 1 lime or lemon
1 garlic clove, minced

METHOD

  1. Combine chopped corn, capsicum, coriander and cherry tomatoes.

  2. Mix lemon juice and garlic.

  3. Combine chopped ingredients and juice.


CHIPOTLE TEMPEH

INGREDIENTS

1 capsicum, roasted
1 clove garlic, minced
2 TBS olive oil
Chipotle seasoning or 1 x chipotle chilli
1 block of tempeh, sliced

METHOD

  1. Blend capsicum, garlic, olive oil  & chipotle.

  2. Marinate sliced tempeh or protein of choice in sauce.

  3. Bake or grill to your taste!
