VEGAN MEXICAN BURGERS

INGREDIENTS
4 burger buns (look for vegan friendly options at your supermarket)
4 x Yumi’s Classic Veggie Burgers
Lettuce
Vine tomato, sliced
1 large avocado
½ lime, juiced
Tomato salsa, to serve
Corn chips, to serve (look for vegan friendly options at your supermarket)
Sea salt and freshly cracked black pepper
METHOD
Peel and de-seed the avocado. Roughly mash with a fork then stir though lime juice. Season to taste.
Cook Yumi’s Classic Veggie Burgers according to packet instructions.
To assemble the burgers, spread 1 tbsp tomato salsa on the base of each burger bun. Top with lettuce, prepared Yumi’s Classic Veggie Burger, tomato and a generous dollop of avocado. Finish with a handful of corn chips, more salsa and the burger bun top.
