CHIPOTLE HALOUMI BURGER

INGREDIENTS

2 packets Yumi’s Classic Veggie Burgers
4 larger slices of haloumi
1 tbsp chipotle sauce
1 tbsp olive oil
4 rings tin pineapple
4 brioche burger buns
Baby gem lettuce

SLAW
1/4 red cabbage, shredded
1 carrot, grated
1/4 cup coriander leaves
3 radishes, thinly sliced
Juice of 1 lime
Red chilli flakes
Sea salt flakes

METHOD

  1. To make the slaw, combine all ingredients in a bowl, season with salt.

  2. Preheat a BBQ to medium-high. Grill Yumi’s Classic Veggie Burgers on both sides until heated through. Set aside, cover with foil to keep warm.

  3. Whisk together chipotle sauce and oil, brush over the haloumi then turn BBQ down a little and grill haloumi until golden.

  4. To assemble the burgers, place 2 lettuce leaves on the base of each bun. Top with burger, haloumi, pineapple and a generous handful of slaw. Top with bun lid and serve immediately.
