THAI CHILLI VEGGIE BITE STIR FRY

INGREDIENTS
2 tbsp peanut oil
1 brown onion, finely chopped
1 clove garlic, crushed
3cm piece ginger, peeled and finely chopped
1 red capsicum, finely chopped
100g green beans, trimmed and cut into 3cm lengths
3 tbsp Thai chilli sauce
Juice of ½ lime
1 ½ tbsp soy sauce
2 tsp fish sauce (optional)
2 packets Yumi’s Sweet Potato & Herbs Veggie Bites
To garnish: 1 long red chilli, finely sliced, basil leaves, steamed jasmine rice
METHOD
In large frypan heat sesame oil over low-medium heat. Add onion, garlic and ginger and saute until softened.
Add capsicum and beans and saute 2 mins until softened. Crumble up Veggie Bites and add to the pan with the Thai chilli sauce, lime juice, soy sauce and fish sauce. Fry, stirring regularly, until heated through.
Serve with jasmine rice and garnished with chilli and basil.
