SWEET POTATO AND CASHEW CHICKEN PASTA BAKE

INGREDIENTS
500g pasta, cooked to packet instructions, drained reserving ½ cup pasta water
Shredded meat from ½ roast chicken (about 250g)
2 x 200g tubs Yumi’s Sweet Potato and Cashew Dip
1 cup grated cheese (we used pizza blend)
Sea salt and freshly cracked black pepper
TOPPING
½ cup panko breadcrumbs
½ cup grated cheese
METHOD
Preheat oven to 180ºC fan.
In a large bowl combine cooked pasta, chicken, Yumi’s Sweet Potato and Cashew Dip and grated cheese. Mix well, season to taste then spoon the mixture into an oven-safe baking dish.
Sprinkle over the breadcrumbs and extra grated cheese then bake for 25-30 mins until the cheese is golden and the bake heated through. Serve immediately.
