HOMMUS CHOC CHIP COOKIES

INGREDIENTS
125g Yumi’s Traditional Middle Eastern Hommus
125g smooth peanut butter
125g brown sugar
2 eggs
2 tsp vanilla bean paste
150g plain flour
1 tsp baking powder
50g salted, roast peanuts, roughly chopped
50g milk chocolate chips
METHOD
Preheat oven to 200ºC. Line two large baking trays with baking paper.
In a large bowl combine Yumi’s Traditional Middle Eastern Hommus, peanut butter, sugar, eggs and vanilla. Whisk until combined.
Add flour, baking powder, peanuts and choc chips. Stir well until combined.
Use a 1 tbsp sized cookie scoop (or a tablespoon) to portion the dough into 24 portions. Roll into balls then space out 12 onto each baking tray.
Bake for 7 mins then rotate the trays in the oven and bake for a further 5-8 mins until the cookies are light golden. Allow to cool completely before serving.
