HOMMUS TOASTS WITH CRISPY EGG YOLKS

INGREDIENTS

6 eggs, carefully separated, yolks reserved, plus one whole egg
1 cup plain flour
1 cup panko breadcrumbs
Hight smoke point oil, to fry
Sea salt and freshly cracked black pepper
Sourdough bread slices, to toast
Yumi’s Traditional Middle Eastern Hommus
Toast toppings – we used:
Avocado + everything but the bagel seasoning
Toasted pine nuts, Persian feta, parsley and chilli flakes
Smoked salmon, red onion and dill

METHOD

  1. Heat oil to 190ºC.  Very carefully, dust the yolks in flour.  The best way to do this is to put the flour onto a large plate and sprinkle the flour over the yolks, moving the yolks as little as possible.

  2. Whisk together whole egg with a splash of water in a bowl.  Dip the floured yolks very carefully in the egg wash to coat.  Again it’s best to do one at a time and spoon the egg wash over the yolk. 

  3. Place the yolks onto a plate of panko breadcrumbs and very gently coat using the same method as the flour.

  4. One at a time, fry the yolks until the breadcrumbs are just golden.  This is a very quick process and only takes around 30 seconds so be sure to stand by and watch closely as they cook.  Drain on paper towel and season with sea salt.

  5. To assemble, toast the breads.  Spread each toast with a generous tablespoon of hommus and your chosen toppings, then top with a crispy egg yolk to serve.
