CREAMY CAPSICUM AND CASHEW GNOCCHI

INGREDIENTS
1kg store-bought gnocchi
1 tub Yumi’s Red Capsicum and Cashew Dip, plus optional extra to serve
150g semi sundried tomatoes
2 cloves garlic, crushed
½ cup grated parmesan
1 cup basil leaves, plus extra to serve
Sea salt and freshly cracked black pepper
METHOD
Boil gnocchi according to packet instructions, drain reserving 1 cup of the cooking water.
Combine all sauce ingredients in a blender and blitz until smooth. Add as much of the reserved cooking water as required to make a smooth, creamy sauce.
Add sauce back to the drained gnocchi and toss to coat. Divide among bowls and top with extra dip, if desired, and a scattering of fresh basil leaves.
