Yumi’s White Beans and Oregano Mediterranean Omelette

 Endless Possibilities with White beans with lemon & oregano

Makes 1


2 eggs, plus 1 egg white
Yumi’s White beans with lemon & oregano
1/4 cup goats cheese, crumbled
1 cup rocket
8 cherry tomatoes, halved
1 tbsp finely chopped red onion
5 black olives, sliced
1 tsp olive oil
Sea salt and freshly cracked black pepper


  1. Combine tomatoes, red onion and olives in a small bowl.  Microwave 1 min until soft.
  2. Whisk eggs and extra white together until fluffy.
  3. Heat oil in small, non-stick frypan.  Pour in the eggs, move around with spatula, swirling pan to fill in spaces with wet egg.  Allow to cook 1-2 mins until egg is almost all cooked.  Spoon 4-5 tsp sized dollops of Yumi’s White beans with lemon & oregano onto the top of the omelette, then season.
  4. Add all toppings to one half, fold over to serve.
