Ingredients
3 eggs
10g butter
2 tbsps Yumi’s Red Capsicum and Roasted Cashew dip
Salt and pepper
Buttered toast, to serve

Method
- Combine eggs and butter in a small, cold, non-stick frypan.
- Place the frypan over a medium heat and cook, stirring constantly with a spatula, for 30 seconds. Remove from the heat for 20 seconds, continuously stirring. Return to the heat for 30 seconds, repeating this process until the eggs are set.
- Stir through the dip before seasoning to taste. Serve with hot, buttered toast.
