Yumi’s Garlic Pesto Lamb Chops

Endless Possibilities with Yumi’s Traditional Garlic
Serves 6
This marinade can be used on any kind of lamb, including lamb leg or shoulder as a roast
Ingredients
18 lamb cutlets
1 cup pesto
6 sprigs thyme, leaves removed
1 x Yumi’s Classic Garlic dip
4 cloves garlic, crushed
4 anchovy fillets, finely chopped
Zest 1 fresh lemon, finely chopped
1/4 preserved lemon, finely chopped
Juice 1/2 lemon
Sea salt and freshly cracked black pepper
1 cup pesto

Method
- To make marinade combine all ingredients except lamb chops. Mix well.
- Add chops and toss to coat. Refrigerate 4-6 hours.
- Grill chops on the BBQ over medium-high heat for 2 mins each side and serve.
