Yumi’s Falafel-stuffed roast chicken breast
- Preheat oven to 200ºC (180ºC fan). Line a baking tray with foil.
- Use a sharp knife to cut a horizontal pocket out of the thickest part of the chicken breast.
- In a bowl break up the falafel into crumbs. Mix through the hommus then divide the mixture into two and stuff into the pockets of the chicken breasts. Fold over the top of the chicken to enclose then wrap the breasts in prosciutto.
- Roast for 18-20 mins until golden and cooked through. Serve with steamed asparagus.
A combo of Yumi’s falafel and hommus makes a quick and tasty chicken stuffing. You could even triple the quantity and use this as stuffing for a whole chicken!
