Sweet Potato and Cashew chicken Pasta Bake

Serves 6
Prep time:  15 mins
Cooking time:  30 mins


500g pasta, cooked to packet instructions, drained reserving ½ cup pasta water
Shredded meat from ½ roast chicken (about 250g)*
2 x 200g tubs Yumi’s Sweet Potato and Cashew Dip
1 cup grated cheese (we used pizza blend)
Sea salt and freshly cracked black pepper


½ cup panko breadcrumbs
½ cup grated cheese


  1. Preheat oven to 180ºC fan.
  2. In a large bowl combine cooked pasta, chicken, Yumi’s Sweet Potato and Cashew Dip and grated cheese.  Mix well, season to taste then spoon the mixture into an oven-safe baking dish.
  3. Sprinkle over the breadcrumbs and extra grated cheese then bake for 25-30 mins until the cheese is golden and the bake heated through.  Serve immediately.
