Middle Eastern Veggie Bowl

250g sachet microwave black rice
1 packet Yumi’s Middle Eastern Burgers
2 tbsp Yumi’s Roasted Beetroot Hommus
1/2 small butternut pumpkin, sliced and roasted
1 medium eggplant, grilled
1 za’aar bread, sliced
1 x 70g tin chickpeas, drained
4 tbsp tabbouleh
Mint leaves, to serve
Sumac, to serve
- Prepare rice according to packet instructions. Divide between two bowls.
- Grill Yumi’s Middle Eastern Burgers on a BBQ or frypan until heated through. Place on top of the rice. Arrange remaining ingredients around the burger and top with mint leaves and a generous sprinkle of sumac, to serve.
