Honey Soy Burger Bowls

Ingredients

Serves 2

Cooking time: 10 mins

2 tbsp honey
2 tbsp soy sauce
1 tbsp sake
1 tsp cornflour
1 x 250g packet medium grain microwave rice
1 tsp sesame oil
1 packet Yumi’s Classic Veggie Burgers
½ large avocado, sliced
1 spring onion, sliced
Pickled ginger and sesame seeds, to serve

Method

  1. To make the sauce, whisk together honey, soy sauce and sake in a small saucepan.  In a small, separate bowl whisk together 80ml water and cornflour until smooth.  Add to the saucepan, stir over medium heat until the sauce thickens (around 5 mins).
  2. Prepare rice according to packet instructions.  Stir through sesame oil then divide between two serving bowls.
  3. Prepare Yumi’s Classic Veggie Burgers according to packet instructions, slice and arrange on the rice.  Spoon the honey soy sauce generously over the burger slices and rice.  Garnish with avocado slices, spring onion, pickled ginger and a scattering of sesame seeds.
