Hommus Mac ‘n Cheese

Serves 4

Ingredients

300g elbow pasta
1 ½ cups unsweetened oat milk
2 tbsp plain flour
2 heaped tbsp nutritional yeast flakes
½ tsp mustard powder
200g vegan cheese, grated (we used Bio Cheese)
2 tbsp Yumi’s Traditional Middle Eastern Hommus
Sea salt
Fried breadcrumbs, to serve

Method

  1. Cook pasta according to packet instructions. Drain, reserving ¼ cup cooking water.
  2. In a medium saucepan heat milk over medium heat. Bring to a simmer then add flour and whisk until smooth. Heat until the mixture slightly thickens. Whisk in the nutritional yeast flakes and mustard powder.
  3. Turn heat to low, gradually add the cheese, stirring until it is all added and melted. Season to taste with sea salt then stir in Yumi’s Traditional Middle Eastern Hommus. Add cooked pasta and reserved cooking water, stirring well until the pasta is coated.
  4. Serve hommus mac ‘n cheese topped with a generous shower of fried breadcrumbs.
