Yumi’s Red Capsicum and Roasted Cashew Scrambled Eggs


 Endless Possibilities with Yumi’s Red Capsicum and Roasted Cashews

Serves 1

Ingredients

3 eggs
10g butter
2 tbsps Yumi’s Red Capsicum and Roasted Cashew dip
Salt and pepper
Buttered toast, to serve

Method

  1. Combine eggs and butter in a small, cold, non-stick frypan.
  2. Place the frypan over a medium heat and cook, stirring constantly with a spatula, for 30 seconds.  Remove from the heat for 20 seconds, continuously stirring.  Return to the heat for 30 seconds, repeating this process until the eggs are set.
  3. Stir through the dip before seasoning to taste.  Serve with hot, buttered toast.
