Yumi’s Lentil Burgers


 Endless Possibilities with Yumi’s Lentils with Roasted Tomato and Paprika

Makes 6

Ingredients

1 x tub Yumi’s Pulse Range Lentils with Roasted Tomato and Paprika
250g cottage cheese
400g can lentils, drained, rinsed
3 spring onions, thinly sliced
2 1/2 cups panko breadcrumbs
1/3 cup plain flour
1/3 cup rice bran oil
6 burger buns, to serve
Butter lettuce leaves, plum sauce and Yumi’s Traditional Middle Eastern Hommus, to serve

Method

  1. In a large bowl combine Yumi’s Pulse Range Lentils with Roasted Tomato and Paprika dip, cottage cheese, lentils, spring onion and 1 1/2 cups breadcrumbs.  Season with salt and pepper.  Stir well to combine, form into 6 patties and transfer to a plate.
  2. Place flour into a shallow bowl.  Whisk remaining egg in a separate shallow bowl with 1 tbsp cold water.  Place remaining breadcrumbs in a separate bowl.
  3. Lightly coat each patty in flour, egg wash and finish with breadcrumbs.
  4. Heat oil in a non-stick frypan over med-high heat.  Add fritters and cook for 5 mins each side until golden.
  5. Spread bottom half of buns with plum sauce and top half with Yumi’s Traditional Middle Eastern Hommus.  Fill with lettuce and top with a lentil patty to serve.
