GRILLED FALAFEL & VEGGIE SKEWERS

Cooking time: 15 - 20 min


INGREDIENTS

4 scoops Yumi’s Classic Hommus
1 pack Yumi’s Classic Falafels
4 baby capsicums
1 zucchini, thickly sliced
1 punnet of cherry tomatoes
2 spring onions, sliced chunky
3 brussel sprouts, halved
1/2 red onion, sliced chunky
1 tbs of olive oil
4 scoops of tabouleh (recipe below)

METHOD

  1. Slice up your veggies to the thickness of the falafels

  2. Thread your skewers with veggies & falafels

  3. Bake in the oven for 15 mins at 190˚ or grill on high heat for 10 mins each side or until lightly charred

  4. Serve on a bed of Yumi’s hommus and tabouleh

TABOULEH

Finely dice equal parts parsely, tomato, cucumber and red onion. Mix with equal part quinoa, a squeeze of lemon juice & pinch of salt.
