– 3 large sweet potatoes
– 1 large block of feta crumbled
– 1 handful of chives chopped
– 1 cup Anytime Classic Hommus
1. Bake potatoes in the oven until tender.
2. Cut potatoes in half and scoop out the flesh leaving a shell of skin.
3. In a bowl combine potato flesh, feta, chives and hommus.
4. Fill potato skins with mixture.
5. Return to oven to bake for 10 minutes.
